Call me crazy, but I've just been looking at the tyranid range, particularly the Hormagaunts.
I need a better look at the actual sprues, but I think I could reposition the limbs, replace the tail with a greenstuff teardrop shape, and remodel the head slightly to make an insect-y mount for my wildriders. More ant-like than stag beetle but that's ok.

Scanning the Tyranid models on the GW website I saw stuff which could become alternate bug-themed models to proxy for dragons, great stag/unicorn, treemen, treekin, eagles..... Could even use genestealers for dryads.
I probably won't go that far, but a few more bug-themed mounts might happen. Plus, with Tyranid models I won't have all those holes and warts to fill/remove.
